Gambas Pil Pil (Garlic Chilli Prawns)

This is a Spanish classic which I had never made in my life.  It was also the ONLY thing my sister wanted for lunch the other day, so true to form, I pulled a few things out of the cupboards and gave it a whirl!  Result = Total Success!

 

What You Need

Raw King Prawns (Gambon Crudo)

Loads of Garlic – peeled and sliced

Small, Dried Red Chillies (Guindillas)

Olive Oil

Paprika

Salt

Frying pan

 

How You Do It

Shell the prawns and give them a rinse.

 

 

 

Put plenty olive oil (enough to cover the prawns when you add them) into your frying pan along with the garlic, dried chillies (as many as you like, but enough to give good heat) a sprinkle of paprika and a pinch of salt.  Simmer on a medium heat for around 5 minutes, being careful not to burn the garlic.

 

 

 

Throw in a dash of white wine and allow that to simmer away, then add the prawns.  These should only take about a minute to cook and then voilá!

 

 

 

Serve with some yummy, crusty baguette.
