What You Need
Mushrooms – sliced
Onion – sliced
Vegetable Stock Cube
Butter (You can use Ghee if you like, but I don’t like the taste so much)
How You Do It
Heat a lump of butter in the saucepan and fry the onion and mushrooms, giving them some colour.
Add the rice, cardamom pods and cloves and stir it around for a minute until everything is coated in the butter and mixed together.
Pour over the water (sufficient for the amount of rice you’re making), chuck in the stock cube and cinnamon stick and bring it to the boil, stirring in the stock cube so it dissolves.
Lower the heat to a simmer and cook until the water has evaporated. (Be careful not to add too much water or the rice will be soggy and sticky!)
